Because getting back into the routine tastes so much better with new things that make you want to celebrate every day like it’s Friday.

After all, for many, September is when the year really begins: new resolutions, renewed routines, and brand-new destinations. Six newly opened destinations, with that breath of fresh air we so desperately need to make returning synonymous with discovery.

A breath of fresh air in the heart of the city. Biri Biri arrives with a concept that combines a carefree and vibrant atmosphere. Travel-inspired cuisine, a roguish ambiance, and a touch of mischief promise to make every dinner a memorable experience.

In popular Argentine slang, to have “biri biri” is to have that “something” that cannot be explained, but is instantly recognizable: spark, energy, flavor. In Madrid, this concept has taken the form of a restaurant in the heart of the Justicia neighborhood. From the moment you walk through the door, you are invited to immerse yourself in the atmosphere and enjoy the culinary offerings created by Argentine chefs Manuela Lorenzo and Sofía Cicinelli.

Chitón

The best-kept secret that, in reality, everyone will want to discover. Chitón combines the charm of spaces with soul with a menu that invites you to share, toast, and linger over dinner until the candles burn out.

The Justicia neighborhood has become the place to be in Madrid. Chitón promises to become the new trendy restaurant in Madrid. It’s time to taste the delicacies on its menu: a selection created by executive chef Miguel Vidal in collaboration with MOM Culinary that pays tribute, in its own way, to traditional cuisine. Among the starters, the baked garlic head, Iberian ham croquettes, tuna tartare salad, and chistorra sausage brioche stand out; the latter is undoubtedly the star starter on the menu. The main courses include aged beef burgers, Galician-style hake, and Iberian pork tenderloin with pepper sauce. And you simply must order their homemade French fries with caviar and crème fraîche, an incomparable delicacy.

La Alquimia

Magic in liquid and solid form. That’s how you could describe La Alquimia, a place that plays with the senses through natural wines and a culinary offering that takes the word “experiment” into the realm of pleasure. The perfect spot to let yourself go.

A project that began with a first location where hot cuisine accompanied natural wines and now has a second location in Arapiles, where hot cuisine is replaced by high-quality cold tapas. Two different spaces, united by the same philosophy.

Every week they place orders with different distributors and organize events with producers to taste, chat, and get to know each other. The only recommendation is that you go in ready to play and let them recommend something for you. It’s a place that feels like a house where a party is being held, and the different groups are almost one, talking about different topics at the same pace. It’s fun not knowing what you’re going to find at the party and knowing that you wouldn’t want to miss it for anything in the world: who would?
